Garbanzo Me Crazy Salad With Corn, Peppers and Balsamic Dressing
Updated: Oct 7
Some of the best recipes start with me looking through the pantry and a “let’s see what happens” attitude. This Garbanzo Me Crazy salad came together exactly that way, with a can of garbanzo beans, a little leftover freezer corn, a few garden peppers trying their best in chilly weather, red onion, garlic, parsley, avocado oil, and balsamic vinegar.
No cooking. No fuss. That is the way I roll most of the time.
It works as a quick lunch, a side dish for dinner, or a make-ahead bowl to keep in the fridge. The garbanzo beans make it filling, the corn adds sweetness, the peppers bring crunch, and the balsamic dressing ties everything together with a little tang.

Ingredients for Garbanzo Me Crazy Salad
Here is the simple version, based on what was on hand:
Ingredient | Amount |
Garbanzo beans, drained and rinsed | 1 can, about 15 ounces |
Corn | 1/2 cup |
Mini red and orange peppers, chopped | A few |
Red onion, chopped | About 1/4 cup, or to taste |
Garlic, minced | 1 clove |
Fresh parsley, chopped | A small handful |
Avocado oil | 1/4 cup |
Balsamic vinegar | 2 tablespoons |
Salt and black pepper | To taste |
If your peppers are tiny, use three or four. If they are larger mini peppers, two might be enough. This is a forgiving salad, so there is no need to measure every vegetable with precision.
The key is balance: beans for body, corn for sweetness, peppers for crunch, onion and garlic for bite, parsley for freshness, and balsamic dressing for brightness.

How to make it
Start by draining and rinsing the garbanzo beans. This removes the liquid from the can and gives the beans a cleaner flavor. Add them to a medium mixing bowl.
Add the corn. If it is frozen and already thawed from leftovers, it can go right in. If it is still frozen, run it under cool water for a minute and drain it well.
Chop the mini peppers into small pieces. Dice the red onion finely enough that it spreads through the salad without taking over every bite. Mince the garlic, then chop the parsley.
Add everything to the bowl with the garbanzo beans and corn.
In a small cup or jar, stir together the avocado oil and balsamic vinegar. Add a pinch of salt and a few grinds of black pepper. Pour the dressing over the salad and toss until everything is coated.
Taste it once, then adjust. It may need another pinch of salt, a little more pepper, or an extra splash of balsamic if you like a tangier salad.
For the best flavor, let it sit for at least 10 to 15 minutes before serving. That short rest gives the beans time to soak up the dressing.
Tomorrow night the left-over get mixed in with some chopped chicken - add some garlic bread! BAM dinner is served!
