🌱🥩 From the garden to the skillet!

There’s something pretty satisfying about walking out to the garden, picking a few peppers and onions, and knowing they’re headed straight into tonight’s dinner. 🌶️🧅

This Sizzle & Savor Fajita Beef Skillet is one of those meals that feels hearty and homemade without requiring a whole production in the kitchen.

🥩 Hamburger

🌶️ Fresh garden peppers

🧅Garden onions

🌿 Simple seasonings

🍳 One skillet and dinner is done!

Serve it with cauliflower rice (if you are watching carbs), or whatever you have growing (or hanging around in the pantry). That’s my favorite kind of cooking — use what you have, grow what you can, and make it work.

Because sometimes the best garden harvest isn't another jar of something sitting on a shelf… it's dinner. 😂🌱

1 lb ground beef

1 tablespoon extra-virgin olive oil ( I also like avocado oil)

1 small red onion, coarsely chopped

1 small red and yellow pepper (coarsely chopped)

Garlic, minced (go gang busters here)

1/2 teaspoon salt

2 teaspoons chili powder

1/2 teaspoon cumin

1/8 teaspoon cayenne pepper (more if that's your jam)

1 tablespoon lime juice

1 package cauliflower rice (or rice if you aren't watching carbs)

Diced avocado and tomato (optional but worth it)

Lime wedges

In a large skillet, cook the beef, breaking it up (just like you would for taco's), about 5 minutes give or take. Drain and transfer to a bowl.

Heat olive oil in same skillet and add the onion, bell peppers, garlic and salt and cook (stir occasionally) about 4-6 minutes. Stir in the beef, chili powder, cumin and cayenne - heat for one minute. Stir in lime juice. Remove the skillet from the heat and stir in cilantro.

Meanwhile prepare cauliflower rice or regular rice according to the package instructions.

Lastly - serve it up and top with avocado and tomato, squeeze a lime wedge!
